Citrus Ginger Asian Coleslaw

You can adjust this recipe to your own liking, but this is what I've done and I loved it.  PS, it's even healthy! BONUS!

1/2 head cabbage
3 carrots, grated
1/4 cup almonds, slivered
1 green onion
1/2 bunch cilantro

Dressing:
2 T white or rice vinegar
1 T soy sauce
1 t freshly grated ginger (or to taste)
1 clove minced garlic
3 T olive oil
3/4 t cumin powder

1) Make your dressing by placing all ingredients in a food processor or blender.
2) Chop up your ingredients.  Set aside in a bowl.
3) Pour dressing over vegetables.  Keep chilled.  Enjoy!

Semi Healthy Banana Oat Muffins

They are semi-healthy because they require less fat and there's whole wheat flour and oats in the mix.

Dry Ingredients:
1 1/2 cups whole wheat flour
1 cup rolled oats
1/2 cup brown sugar
2 1/2 tsp baking soda
1/2 tsp cream of tarter
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg

Wet Ingredients:
1 egg
3/4 cup milk
1/3 cup vegetable oil
1/2 tsp vanilla extract
3 brown bananas (mashed)

Mix all your dry ingredient in separate bowl.  Combine your egg, bananas, milk, oil and vanilla until you have a semi-smooth mixture.  Add your dry ingredients to this and mix until well combined.  Scoop into muffin tin lined with cupcake liners (about 3/4 full).  I made mine extra special by adding a sweet topping, see ingredient below.  Bake @ 400F for 18-20 minutes.  Makes about 16 muffins.

Sweet Topping (stir the following):
1/4 cup oats
1/4 cup brown sugar
2 T butter, softened
cinnamon and nutmeg to taste

OMG Peach Pie

I might die in a war for this pie.  And it's super easy...

basic pie crust
at least 5 peaches, but the more the merrier
1 cup sugar
3 T sugar
1/4 cup 2 T water
1/2 tsp almond extract
2 T butter

1) Bake a basic pie crust.  Let cool.
2) Wash and peel peaches.  Set 2 aside.  With the rest, slice into small wedges.  (If these are going to be out for awhile, cover with a few teaspoons lemon juice)
3) With the 2 set aside peaches, mash them in a bowl.  After mashed, combine in saucepan with water, sugar, and cornstarch.  Let it simmer for awhile, then bring to a boil.  
4) Remove from heat and add butter and almond flavoring.  stir till combined.  Add sliced peaches to this mixture.  Fill the pie tin with this un-earthly goodness and let it cool.  Keep refrigerated. 

If you serve this dessert with home-made whip cream, you might skip death and go straight to heaven.
